Finally there is a warm breeze through the mountains and valley with beautiful flowers everywhere. Summer has arrived! These delicious ‘adult’ popsicles are a perfect choice to jazz up your drink selection for an apéro get-together or BBQ. Be sure to pull them out a couple of minutes before taking them out of the mould. If you don’t have popsicle moulds (they are readily available at most grocery or household shops), you can use small paper or plastic disposable cups with wood stir-sticks. Enjoy and have a fabulous summer!

Piña Colada Ice Pops
Makes 7-8 pops

500g chopped fresh pineapple
1 lime, zest and juice
80mls well-stirred canned unsweetened coconut milk
125ml water
3 tablespoons superfine granulated sugar
80mls light rum (or go wild and use Malibu for that coconut feel)

Purée all ingredients in a blender until smooth, then strain through a fine-mesh sieve into a large measuring cup, pressing on and then discarding solids. Pour into moulds. Freeze 30 minutes. Insert sticks, then freeze overnight or up to 24hrs.

Berry Sparkling Popscicle
Makes about 12 pops

40g fresh blackberries
120mls crème de cassis
Splash fresh lime juice (about the 1 limes worth)
2 pinches lime zest
Handful of fresh raspberries, wild strawberries and blueberries, sliced if needed
600mls Prosecco

Pour crème de cassis on blackberries and crush. Add lime juice and zest. Put 1 teaspoon of mixture into each popsicle form and drop a few fresh raspberries, strawberries and blueberries on top. Pour Prosecco on top. Freeze for about 1 to 2 hours, long enough to be able to insert popsicle sticks then freeze overnight. Enjoy!
